INGREDIENTS:


  • 1 3/4 C Vegetable Oil
  • 1 C Garlic, finely chopped
  • 1/2 C Fresh Red Chili, chopped finely or use a food processor
  • 1/4 C Dry Red Chili, crushed
  • 1 tsp Smoked Paprika or you can just use Paprika
  • 2 tbsp White Sugar
  • 2 tbsp Calamansi juice
  • 1 1/2 tbsp Salt, I forgot to mention in the video.

  • 3 lbs shredded green papaya
  • 1 medium carrot thinly sliced
  • 1 small red bell pepper julienne
  • 3/4 cups raisins
  • 1 head garlic sliced

  • 1 1/3 cups granulated white sugar
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper


Achara is the condiment that I always found on the table when we used to travel back to the Philippines to visit my father’s side of the family. It was like the ketchup or mustard, and it went with just about anything. Grilled fish, barbecued pork, grilled chicken – Achara has that sweet and sour flavour that I just love. Try it with a burger or a hot dog, and you’ll soon find that you’ll want to put it on just about everything, too!

 

Ingredients:

  • 2 tbsp Olive oil
  • 4 cloves Garlic
  • 1 Big size onion
  • 2 pcs. Green chilli
  • 2 pcs. Red chilli
  • 400 grams of chicken liver
  • 1 1/2 tsp ground pepper
  • 1 tsp. Ground Ginger
  • 2 tbsp Oyster Sauce
  • 4-6 tbsp brown sugar
  • 1/8 cup vinegar or 2-4 tbsp vinegar 
  • 4 tbsp Breadcrumbs
  • 2 1/8 cup Water

Note:
Adjust seasoning according to your taste.

 Lechon Manok Sauce Recipe

Ingredients

  • 1 lb. chicken liver

  • 2 cups of water

  • 1 medium onion diced

  • 2 tablespoons minced garlic

  • 10 to 12 tablespoons white vinegar

  • 8 to 10 tablespoons brown sugar

  • 1 ½ teaspoons salt

  • ¼ teaspoon ground black pepper

  • 1 piece chicken cube optional

  • 7 to 10 tablespoons bread crumbs

  • 2 tablespoons cooking oil

Instructions

  1. Bake the chicken liver fin 350F for 15 minutes. Remove from the oven and let cool. Chop into smaller pieces and then set aside.

  2. Heat oil in a cooking pot.

  3. Sauté the garlic and onion when the oil starts to get hot. Cook for 2 minutes

  4. Add the baked chicken liver. Cook for another 3 minutes.

  5. Pour the water in the pot. Let boil.

  6. Using a hand blender, puree the mixture. You can also pour the mixture in a regular blender and puree until the texture becomes smooth.

  7. Let the mixture boil. Pour the vinegar in and then let the mixture boil once more.

  8. Stir and add the brown sugar.

  9. Add salt and pepper. You may add more if needed. Stir.

  10. Stir in the bread crumbs. Continue to cook in medium heat while stirring using a wire whisk until the desired consistency is achieved.

  11. Add the chicken cube (optional). Continue to cook for 3 minutes.

  12. Transfer to a sauce bowl. Serve with lechon manok.

  13. Share and enjoy it!

 Pinoy Street Food Fishball Sauce  Recipe

Ingredients:

  • 1 1/2 cup Water
  • 1/2 cup Sugar
  • 1 and 1/2 Tbsp Soy Sauce
  • 3 Tbsp Cornstarch
  • 1/8 Tsp Ground Pepper
  • 1 whole Onion
  • 1/4 tsp Salt



 Fishball Sauce Recipe (Kikiam sauce)

Ingredients:

  • 1 1/2 Cornstarch
  • 1 1/2 All-purpose flour
  • 6 tablespoons of sugar
  • 1 pc. chilli  (sliced)
  • 1 medium onion (cut into cubes)
  • 5 cloves of garlic (minced)
  • Cooking oil
  • Water

Sweet & Sour Sauce Recipes

Ingredients:

  • 1 tbsp ginger, finely chopped
  • 1 tbsp onion, finely chopped
  • 1 tbsp garlic, minced
  • salt & pepper, according to taste
  • 2 tbsp sugar
  • 1 tbsp banana catsup
  • 3 tsp vinegar
  • 1 tbsp cornstarch & 3 tbsp water, mixed
  • 3/4 cup water
  • cooking oil, for sautéing

Instruction:

  1. Heat some oil in a saucepan, then sauté the onion, garlic, and ginger. 
  2. Add water, catsup, and vinegar then mix well.
  3. Adjust the heat to low, then add salt, pepper, and sugar.
  4. Gradually add the cornstarch mixture while stirring.
  5. Simmer for 1 minute then remove from heat.
  6. Serve with your favourite fried or baked dish. Enjoy your sweet and sour sauce!

 Sweet Chili Sauce Recipe

For: 1 1/4 cup (300 ml)

  • 3/4 cup White Sugar 
  • 3/4 cup White Vinegar 
  • 1/4 cup Water
  • 1 tsp Iodized Salt 
  • 1/4 cup Chopped Red Bell 
  • 5 cloves Garlic 
  • 2 pcs Red Chili 
  • 1 tbsp Potato Starch 
  • 2 tbsp Water

For: 3 Liters

Ingredients 

  • 7.5 cup White Sugar 
  • 7.5 cup White Vinegar 
  • 2.5 cup Water
  • 10 tsp Iodized Salt 
  • 2.5 cup Chopped Red Bell 
  • 4 Head Garlic 
  • 20 pcs Red Chili 
  • 10 tbsp Potato Starch 
  • 1 1/4 cup Water

FILIPINO BARBECUE SAUCE

Ingredients.

  • 1 lb Chicken Liver
  • 2 tbsp Canola Oil
  • A thumb-sized Ginger, crushed
  • 4 cloves garlic, finely chopped
  • 2 tbsp Brown Sugar
  • 1 tbsp Soy sauce
  • 3 tbsp Banana Ketchup
  • 1 tbsp Vinegar
  • 1/2 tsp Ground Black pepper
  • 1/2 C Wate

 BBQ Sauce 3 Ways Recipe

Ingredients

  • 2 cup ketchup
  • 1/4 cup brown sugar
  • 1/2 cup vinegar
  • 1/2 cup of water
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon paprika
  • 1 tablespoon chilli
  • 1 teaspoon turmeric or dry mustard
  • 1 teaspoon ground pepper
  • 1 tablespoon onion powder

Sweet (add)

  • 1 tablespoon molasses
