Cheesy Palitaw is a term used to call a sweet flat rice cake that is eaten in the Philippines as a snack or dessert. Originally, grounded or pounded sticky rice is used to make this rice cake (called kakanin in the local language) – however, the practice of using packaged rice flour became common because it is more efficient.
This is made by simply mixing rice flour and water until a dough is formed. The dough is divided into small pieces then manually molded into a ball-shape figure and flattened. The flattened dough are cooked in boiling water until they float – this is the reason why it was called as such. The name was derived from the Filipino word “litaw”, which means “to float or to surface”.
I should have made this yesterday but I ran out of glutinous rice flour; I needed to go back to the Asian store this morning to replenish my stock. Glutinous rice flour is still best compared to ordinary rice flour for this recipe.

Ingredients
- 3 cups Glutinous Rice Flour (Malagkit)
- 1 1/4 cup Water
- 1 cup Grated Coconut (Niyog)
- 1/2 cup Sugar
- 1/4 cup Toasted Sesame Seeds
- Cheese cubes, for filling
- Water for boiling
Instructions
- In a bowl combine glutinous rice flour and water. Mix until you form a dough. Knead dough with clean hands until smooth.
- Scoop 1/2 tablespoon of the mixture and flatten the dough with the palm of your hands. Put cheese cube at the center and shape into a ball. Repeat process until you finish all the mixture.
- Boil a pot of water and drop each palitaw balls. Cook until the palitaw ball floats into the surface. Remove from water using a slotted spoon and drain.
- Roll palitaw balls in grated coconut and sprinkle with sugar-sesame mixture when you're ready to serve it since sugar melts over time.
- You can place cheesy palitaw balls in a plate, bilao or in clear plastic container with banana leaves if you want to sell it.
